A Refined Summer Expression of Tonkatsu — “Chilled Katsudon” Returns for 2026

Thank you very much for your continued patronage of Katsukichi.

We are pleased to announce that our seasonal specialty, the “Chilled Katsudon”, will be available again from May 1, 2026 for a limited time during the summer season.

This item will be offered at the following locations:
Shin-Marunouchi Building, Hibiya International Building, and Nihonbashi Takashimaya S.C.
Please note that our Shibuya location has been temporarily closed since June 14, 2025.


Celebrating its 25th anniversary, our Chilled Katsudon has surpassed 250,000 servings sold.
We would like to express our sincere gratitude to all our guests for their continued support over the years.

While we prepare sufficient quantities each day, this is a limited offering and may sell out.


◆ About the Chilled Katsudon

Our Chilled Katsudon is a refreshing summer dish featuring crispy tonkatsu served over chilled rice, finished with a delicate cold dashi broth.

It is complemented by seasonal vegetables such as cucumber, okra, and grated yam, along with carefully selected condiments including myoga ginger, shiso leaves, ume (plum paste), and wasabi.
The set is served with salad and pickles, offering a light yet satisfying dining experience.

The tonkatsu is made from premium domestic pork, thick-cut and slowly fried at low temperature in corn oil, following our long-established method.

The chilled dashi is meticulously prepared using:

  • Bonito flakes from Makurazaki (Kagoshima)
  • Kelp from Hokkaido
  • Dried sardines from Kujukuri (Chiba)

For seasoning, we use a specially blended soy sauce from Maruyama Miso & Soy Sauce Brewery in Azumino, Nagano, a producer with over a century of tradition.
The ume paste is crafted from two varieties of Nanko plums from Minabe, Wakayama, known for their refined acidity and depth of flavor.
